Kothimbir Vadis

Oh its been ages that i have psted something on my blog. So, this recipe is for all my freinds and family members who forced n encouraged me to come back to blogging. I use to have kothimbir vadis during my drive from Pune to Mumbai. Now while i am in Jaipur, I tried to recreate their magic in my kitchen.


Ingredients:
1.       I cup besan
2.       I bunch-finely chopped coriander leaves (Kothimbir)
3.       Ginger-garlic paste- ½ tsp
4.       1 green chili- finely chopped
5.       Baking soda -1/4tsp
6.       Turmeric powder- ¼ tsp
7.       Chili powder-1/2 tsp
8.       Hing – a pinch
9.       Sugar- 1 tsp
10.   Salt to taste
11.   Lemon juice
12.   Water
13.   Oil – 1tbsp
METHOD:
Mix everything from ingredients 1 to 11 and make a thick paste using water.
Heat 1 tbsp oil in a pan and add to the paste.
Grease a deep platter and spread the paste evenly (like you do for dhokala). Steam it for 15 mins.
Remove, cool and cut into square shape pieces.
Heat oil and deep fry the pieces.
Serve hot with green chutney.
