Veg Calzone

Veg Calzone
Diwali is just round the corner and now all that comes to my mind is FOOOOD. Delicacies are being made, wishes floated and spirituality is in the air. This dish may not sound and look like a typical diwali treat but its so beautiful and yum that i cannot hold myself from posting it :)
Calzone is an Italian dish and can be described as a folded pizza. Refer to my step by step pictorial for a better understanding of the procedure


Ingredients:

For the Dough:

  • 3 cup maida (sifted)
  • 1 tsp dry yeast
  • 1 cup warm water
  • 1/2 cup olive oil
  • 1 pinch of castor sugar
  • 1/2 tsp salt
For the Filling:

  • 1 chopped capsicum
  • 1 chopped tomato
  • 1 chopped onion
  • 1tsp Pizza seasoning
  • Salt
  • 1-2 tbsp Pizza sauce (i used the ready made one)
  • Grated mozzarella cheese
Others:

  • Egg white
  • Dry Basil
Method:
Add the dry yeast to warm water and keep aside for 10-12 mins.
Take another bowl and mix maida, olive oil, salt, sugar and slowly add the warm water with yeast to make a dough.

Keep the dough in a bowl, wrapped with klin film and let it stand for 30 mins. Meanwhile, put a pan on fire and add 1Tsp olive oil and add all the veggies. Saute for 5 mins.Add pizza seasoning and 1 tsp salt. Let it cool

Now take the dough and roll it into a sheet (not very thin).  In the center spread the pizza sauce. Put a second layer of all the sauteed veggies and finally cover it will grated cheeze.

Now make cuts on both sides of the filling. Bring each strip and paste it on the other end with the help of egg white. once the entire pizza is sealed, brush it with egg white and sprinkle some oregano and basil on top (if some filling is peaking outside, do not worry. It will only add to the look).

Pre-heat oven at 220 degree Celsius and bake the dish for 25 mins.

Yummy calzone is ready to be served.

Coconut Chuha
I never thought that I would be posting this recipe on my blog. However with the immense response received from friend I feel overwhelmed and obligated to post it. It is nothing but a way to say Thank you to all those who have given so much love to my ‘chuhas’ (mice).

This not my original creation (so no credits for that), but is an inspiration from one of my fav blogs.

INGREDIANTS:       (makes 20 chuhas)

Coconut powder : 200 gms (I used the one available in the market)
Milkmade : 200 gms
Castor sugar : 100 gms
Jeentaan (comes in mouth freshners) or jam, frozen ice-cream or brown chocolate balls and Maggie for decoration.

METHOD:
Mix coconut powder, milkmade and sugar and make a soft dough.
Break the dough in 20 small portions. Give each portion the shape of a mouse. If you feel the dough is a little soft, keep them in fridge for about ½ hr, and they will get a little firm
Use frozen ice-cream for eyes;  jam or jeentaan for nose and small Maggie strands for the tail.

Mayo Corn-Off the Cob



Come the rainy season and what better than a BHUTTA. But here's a twist from the regular corn on the cob. This one is so simple and finger licking that you will end up asking for more. I tried it yesterday when some guests announced their arrival on the last moment and I must say, they were not disappointed.
 
INGREDIANTS:
 
Sweet Corn Kernels : 1 bowl
Tomato : 1 (chopped)
Cucumber : 1/2 (chopped)
Mayonnaise : 2 tbsp.
Salt to taste
Pepper
Lime juice : 1/2 tsp
 
METHOD:
Mix all the ingredients well and serve chilled
