Veg. Frankie

Ah this is simple, quick, super healthy and yummilicious. This recipe is so simple, you might actually end up wondering if this will be really as delicious as it claims to be.
This veg Frankie can be fixed within literally 15 mins including the prep. and is good for both breakfast or a light dinner.


Ingredients: (serves 4)


Dough: 
Incase you like the whole wheat flour, simple make the regular chapatti dough.

For the Maida variant use:
Maida: 2 full serving spoon
Suji: 1 serving spoon
Oil: 1 Tsp
Mix all along with a little warm water to make a soft dough.

Filling:

Onion: 1 large – cut in thin slices lengthwise
Capsicum – 1/4th - cut in thin slices lengthwise
Cabbage – I cup- cut in thin slices lengthwise
Carrot – ½ cut in thin slices lengthwise
Paneer- approx. 30 cubes or cut in slightly thin rectangles
Oil – 2 Tsp
Salt and Pepper

To also need:
Chaat masala
Corriander Chutney

Method:

To make the filling:
Heat oil (I used olive oil) in a pan and add onions. Saute for 1 min

Add all other veggies and sauté for another 1-2 mins (there is no carrot in the picture, as I did not have it).
Add paneer and salt and pepper and cook for another 2 min.
To fix the frankie
Make small thin chapatis of whichever dough you prefer (Maida or whole wheat) and place on hot tava. Once the bubbles appear, flip and cook from the other side. I did not use any oil/ghee. You may use very small amount in case you like.

Once the chapatti is done, place it on a plate and spread about ½ tsp coriander chutney on it.
Now generously put the filling in the centre of the chapatti. 

Sprinkle some chaat masala.


Roll and serve.

Super Quick Bourbon MiniCakes

This is that unusual time in our lives when we are under a lockdown and the only way to keep sane is putting your creative cells to work. It is also important to keep kids engaged and hence this recipe came to life. It is simple, quick and extremely delicious.


Ingredients
10 Bourbon biscuits

2.5 TSP Sugar

1/4th to 1/2 cup milk

2 Tbsp refined oil

Pinch of baking soda

Method:

  • Break each biscuit in 2-3 pieces and grind of the pieces in a mixie.
  • Add sugar and grind again
  • Make a fine powder
  • Add oil and milk and mix again
  • Finally add baking soda
  • Now grease the Appa maker
  • Pour the batter in each section (cover only 1/2 of each cavity so that it has room to rise)
  • Cover and cook on low flame
  • Turn all cakes after 8-9 mins
  • Cook on the other side for about 4-5 mins )
Yippe.... Ready to be popped in your mouth🤤

Capsicum Paneer Rings


An Attractive Plate Makes For A Tastier Dinner’. This is truly what pushed me to try this dish. The Look of it is so comforting and the taste surely dint disappoint. We have had stuffed bell pepper in past but the way this has been cut and stuffed, its makes for a pretty handsome dish.

Ingredients:

2 Large Bell Pepper
1 Cup Crumbled Paneer
2 Boiled Mashed Potato
½ Cup Chopped Cilantro
1 Tsp Corriander Powder
1Tsp Jeera Powder
2 Finely Chopped Green Chilies
Salt to Taste
Oil for grilling

For Tomato Gravy:
5 Medium size Tomatoes
2 Onion
7-8 Cashews
1 Tbsp Cumin Seeds
2 Garlic Minced
1 Tbsp Cooking oil
Salt to Taste



Method:

1.               Cut thick slices of bell peppers after deseeding it. Reserve the leftover peppers. In a mixing bowl, add crumbled paneer, mashed potato, cilantro, coriander cumin powder, jeera powder, salt and green chilies. Mix it all together. Stuff this paneer mixture in the bell pepper slices tightly. Heat a pan, grill these bell pepper slices evenly on both the sides.
Smear oil while grilling. Keep them aside.

Now it's time to make the tomato gravy.

  • Add roughly chopped tomatoes, cashews, and onion in water and bring to one boil. Drain them and grind in a mixer along with cumin seeds
  • Add milk while grinding to give the paste a certain smoothness. Heat oil in a pan, fry garlic and the remaining bell peppers till they are done. Next add the ground tomato paste along with salt. Cook covered for 3-4 minutes so that the raw smell of tomatoes goes away.
  • Before serving, add the grilled capsicum slices. Drizzle cream or yogurt if you wish to and serve hot.

Easiest Veg Lasagne



Its a long due post considering that i have been away from writing for quite some time now. And when you come back to something after a long break, you want to approach it with the best of your tools.

So here comes my famous lasagne. One thing which is truly special about this dish is that its a Fool Proof recipe. No matter what is your level of expertise in kitchen, this has to turn out well. 

Also you might have moments where your lasagne sheets will tear during boiling or handling, but just Don't Stop.When everything comes together, it is pure awesomeness.

Ingredients:

Lasagne Sheets - 6

For Tomato sauce:

Large finely chopped tomatoes- 5
Large finely chopped onion -5
Garlic cloves, chopped - 8-10
Bay leaf - 2
Oregano - 1 tsp
Basil / Tulsi leaves - 1 tsp
Tomato ketchup- 2 Tbsp

For Spinach Sauce (Thick):

Spinach (boiled and drained) - 1 kg
Cheese grated - 1 small bowl
Thick cream - 1 small bowl
Salt and pepper powder

Method:
1. Boil lasagne sheets in a big vessel with enough water for 15 mins. Make sure you add the sheet only after the water is boiling hot.
2. Once Al dante, drain the sheets and spread them on a cloth so that they don't stick to each other.
3. To make tomato sauce, heat oil in a pan. Add onion, bay leaf, tulsi, garlic and fry.
4. Add chopped tomatoes and fry for 2-3 mins.
5. Add tomato ketchup, salt and red pepper powder. Fry for 1 min and keep aside.
6. To make spinach sauce, take a bowl, and add all ingredients and mix well preferably with your hands.
7. To assemble:
a. Take a rectangular microwave safe dish and grease it lightly with oil.
b. Take 2 spoon of tomato sauce and spread on the bottom of the dish.
c.  Take 2 lasagne sheets and place it side by side on the first layer.
d. Next top the lasagne sheets with 2 tbsp spinach sauce.
e. Repeat the layers till u finish all the 6 sheets and the sauces. 
f. Make sure to have spinach sauce as your last layer and top it with some grated cheese.
g. Bake on microwave convection mode for 25 mins. (Preheat :180 degree C)

Choco Cheers

Choco Cheers (No Bake-Cookies)

At the outset, i wish all of you A Very Happy New Year. What better way to celebrate new beginning than having sweets. This is one of my favorite recipe of all times, taught by my sister Shivali who is an expert cook herself.

It is a no bake cookie which needs some very basic ingredients and can be fixed within no time.



I am diving the recipe in 2 parts for convenience
Part 1
Ingredients:
1/2 cup water
2 tbsp Maida
2tbsp Castor sugar
1 tbsp Coffee powder
15 Marie Biscuits

Method:
- Mix water, maida, sugar and coffee powder in a bowl and mix well.
- Dip one marie biscuit at a time in the liquid and stack in a plate.
- Put this in the fridge for 20 mins to set.

Part 2
Ingredients:
4 tbsp vanaspati ghee
3 tbsp castor sugar
3 tbsp coco powder

Method:
- Mix all these ingredients very well.
- Take out the biscuit stack and apply the icing all over it.
- Refrigerate for 1/2 an hour

Make cookies by cutting the cake at slight angle and  Enjoy!!

Veg Calzone

Veg Calzone
Diwali is just round the corner and now all that comes to my mind is FOOOOD. Delicacies are being made, wishes floated and spirituality is in the air. This dish may not sound and look like a typical diwali treat but its so beautiful and yum that i cannot hold myself from posting it :)
Calzone is an Italian dish and can be described as a folded pizza. Refer to my step by step pictorial for a better understanding of the procedure


Ingredients:

For the Dough:

  • 3 cup maida (sifted)
  • 1 tsp dry yeast
  • 1 cup warm water
  • 1/2 cup olive oil
  • 1 pinch of castor sugar
  • 1/2 tsp salt
For the Filling:

  • 1 chopped capsicum
  • 1 chopped tomato
  • 1 chopped onion
  • 1tsp Pizza seasoning
  • Salt
  • 1-2 tbsp Pizza sauce (i used the ready made one)
  • Grated mozzarella cheese
Others:

  • Egg white
  • Dry Basil
Method:
Add the dry yeast to warm water and keep aside for 10-12 mins.
Take another bowl and mix maida, olive oil, salt, sugar and slowly add the warm water with yeast to make a dough.

Keep the dough in a bowl, wrapped with klin film and let it stand for 30 mins. Meanwhile, put a pan on fire and add 1Tsp olive oil and add all the veggies. Saute for 5 mins.Add pizza seasoning and 1 tsp salt. Let it cool

Now take the dough and roll it into a sheet (not very thin).  In the center spread the pizza sauce. Put a second layer of all the sauteed veggies and finally cover it will grated cheeze.

Now make cuts on both sides of the filling. Bring each strip and paste it on the other end with the help of egg white. once the entire pizza is sealed, brush it with egg white and sprinkle some oregano and basil on top (if some filling is peaking outside, do not worry. It will only add to the look).

Pre-heat oven at 220 degree Celsius and bake the dish for 25 mins.

Yummy calzone is ready to be served.

Coconut Chuha
I never thought that I would be posting this recipe on my blog. However with the immense response received from friend I feel overwhelmed and obligated to post it. It is nothing but a way to say Thank you to all those who have given so much love to my ‘chuhas’ (mice).

This not my original creation (so no credits for that), but is an inspiration from one of my fav blogs.

INGREDIANTS:       (makes 20 chuhas)

Coconut powder : 200 gms (I used the one available in the market)
Milkmade : 200 gms
Castor sugar : 100 gms
Jeentaan (comes in mouth freshners) or jam, frozen ice-cream or brown chocolate balls and Maggie for decoration.

METHOD:
Mix coconut powder, milkmade and sugar and make a soft dough.
Break the dough in 20 small portions. Give each portion the shape of a mouse. If you feel the dough is a little soft, keep them in fridge for about ½ hr, and they will get a little firm
Use frozen ice-cream for eyes;  jam or jeentaan for nose and small Maggie strands for the tail.
